Serves 2 -4

Mango Salsa

2 small mangoes, peeled and chopped

½ cup (125ml) diced cucumber

¼ cup (50ml) chopped red onion

1 green onion, white only finely minced

1 tsp (5ml) minced ginger

2 tbsp (30ml) chopped cilantro

1 small jalapeno pepper, seeded and chopped (wear gloves)

2 tbsp (30ml) fresh lime juice salt and pepper to taste

 

Combine all ingredients in a small bowl and let marinate in refrigerator

Two hour or overnight until needed

Serves 2 -4
